There is a diet root beer, diet Moutain Dew, diet Sierra Mist, diet 7UP, diet Rite, diet everything. Why don't many restaurants have more than 1 or 2 diet choices? Diet Pepsi is horrible to me. This goes for fast food or sit-down restaurants.

Because if they give too many options, it is hard for them to do all that prep work. Besides, restaurants don't want to spend money changing their menu every time a fad diet comes around.

I think it is funny when people say "I'll have a triple cheeseburger with a super sized fry...since I'm on a diet I'll have a diet coke to go with that" I like diet drinks as well but fast food restaurants are only going to supply what is in highest demand....most people are just happy with one kind of diet drink.
