im guessing it's a either lamb or beef. they already have turkey and roast beef but because it's a fast food restaurant and it's "traditional" probably isn't veal due to price and not everyone is fond of veal could say the same for lamb as idk what the traditional meat for gyro's are i believe it is lamb though. probably is a mixture imo of lamb+beef though or just straight up beef to please everyone with traditional seasonings.
