Why doesn't Subway have Swiss cheese? Any ideas?

Like most other businesses, the stock what customers are most likely to buy. If there is not enough demand, they drop it from the menu.

They don't have room to offer too many kinds of cheese, and they have to make a profit. That means they'll only have the kinds of cheese that are most popular and don't cost them too much. Swiss cheese is probably less popular, and/or more expensive.
